During pregnancy it is good to eat enough fish and fiber. This prevents constipation. In addition, fish contains good fats. This time I have a very healthy recipe for you with lots of vegetables, fiber and flavor, namely curry with fish and couscous. And of course: super easy and fast!
Curry with fish and couscous
The ingredients for 2 adults.
- 120 grams of dry spelled or wholemeal couscous (available from AH, among others)
- 2 pangasius fillets
- 300 grams of green beans or string beans
- 100 grams of mushrooms
- large onion
- 1 clove of garlic
- 1 leek
- Hand of arugula
- Wok paste, for example the Balinese wok paste
- 200 ml coconut milk light (available from AH)
- Curry spices or curry spices, for example the curry mix of Jonnie Boer

Preparation of Curry with fish and couscous
Cut the onion into small pieces and squeeze out the garlic. Heat oil in a large pan and fry the onion and garlic together with the wok paste (1 small bag or 2 tablespoons). Add the curry mix of herbs and fry briefly. Add the mushrooms and sliced leeks and stir-fry for 2 minutes.
Put the green beans together with 200 ml of coconut milk in the pan with the other vegetables. Let it simmer for 20 minutes. Stir once in a while.
Prepare the couscous according to the instructions on the package.
Cut the pangasius fillet into small cubes. Add it to the curry after 16 minutes and let it simmer for the last 4 minutes. When the 20 minutes are over you can season the curry with salt and pepper (or LoSalt or Jozo Bewust). Stir in the rocket until it has shrunk a bit.
Divide the couscous over two plates and add the curry.
